Olive oil reduces saturated fat while maintaining moisture.

Preheat the oven to 400°F.
Prepare the cornbread according to the instructions on the back of the Jiffy box, using 2 eggs and buttermilk instead of milk.
Pour the cornbread mixture into an aluminum baking pan and level it off.
Bake the cornbread for about 20 minutes.
While the cornbread is baking, butterfly the two whole chickens.
Season the chickens thoroughly with a homemade seasoning blend, ensuring to rub the seasoning under the skin and in all pockets.
Drizzle a capful of olive oil over each chicken for crispiness.
Cover the chickens with aluminum foil to lock in juices and bake at 375°F for 2.5 hours.
Once the cornbread is done, let it cool before crumbling it into a large mixing bowl.
