2 lbs bacalhau (salted cod)
4 tbsp olive oil
1 large onion, sliced
4 cloves garlic, minced
2 large tomatoes, chopped
1 bell pepper, sliced
1/2 cup black olives, pitted
1/4 cup fresh parsley, chopped
1/2 tsp black pepper
1/2 tsp paprika
1/2 tsp salt
1/2 cup water

Soak the bacalhau in water for 24-48 hours, changing the water several times to remove excess salt.

Preheat the oven to 375°F (190°C).

In a large skillet, heat the olive oil over medium heat. Add the sliced onion and minced garlic, sautéing until the onion is translucent.

Add the chopped tomatoes and sliced bell pepper to the skillet, cooking for about 5 minutes until softened.

Stir in the black olives, black pepper, paprika, and salt. Cook for another 2 minutes.

In a baking dish, place the soaked bacalhau and pour the vegetable mixture over it.

Add 1/2 cup of water to the baking dish to keep the fish moist during cooking.

Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.

Remove the foil and bake for an additional 15 minutes, or until the bacalhau is cooked through and flakes easily with a fork.

Garnish with fresh parsley before serving.
