Nigerian Rice and Spaghetti

Nigerian Rice and Spaghetti, often referred to as Jollof Spaghetti, is a beloved dish in Nigeria, combining the rich flavors of Jollof rice with the comforting texture of spaghetti. This dish is a staple at gatherings and celebrations, showcasing the vibrant culinary culture of Nigeria. It reflects the country's love for bold spices and communal dining, making it a favorite among families and friends. Today, variations of this dish can be found in many parts of West Africa, adapting to local ingredients and tastes.

Break spaghetti into small pieces.
Add butter and a little vegetable oil to a dry pan and melt the butter.
Toast the broken spaghetti in the melted butter and oil until it turns brown and has a nutty aroma.
Add rinsed rice to the toasted spaghetti and mix well.
Add seasoning and salt to taste.
Pour enough water to cook the rice and spaghetti, then cover the pot and cook until the water is dried up and the rice and spaghetti are fully cooked.
Fluff the cooked rice and spaghetti and set aside.
In a separate pan, heat a little vegetable oil until hot, then add chopped onions and cook for about 60 seconds.
Add ginger and garlic paste to the onions and mix well.
Add diced carrots and mix, then add chopped bell pepper and green peas.
Season the vegetables with soy sauce and adjust seasoning as needed.
Combine the cooked rice and spaghetti with the sautéed vegetables and mix well until combined.
