Preheat the oven to 350 degrees Fahrenheit.

Heat 1/2 tablespoon of canola oil in a pan over medium-high heat.

Add the scallions and mushrooms to the pan and cook for 5 minutes or until softened.

Add the spinach to the pan and cook until wilted for about 2 minutes.

Remove from heat and let the vegetables cool.

Once cooled, squeeze the vegetables to remove any remaining liquid.

In a small bowl, combine the cooked vegetables, crab meat, cream cheese, lemon juice, and celery salt.

Place 2 salmon fillets on a baking sheet lined with foil and season with salt and pepper.

Make a small incision lengthwise along each salmon fillet, being careful not to slice all the way through.

Divide the crab meat mixture in half and stuff it into the incision of each fillet, piling the rest on top.

Bake for 18 to 20 minutes or until the stuffing begins to brown.
