1 cup warm water
1 tbsp active dry yeast
1 tbsp sugar for the yeast
3 cups bread flour
1/2 cup malt milk powder
1/2 tsp salt
2 tbsp sugar for the dough
1 large egg

4-6 tbsp unsalted butter for spreading
1 tsp vanilla extract
1 cup date sugar
1/3 cup boiling water
2 tbsp melted coconut oil or melted butter
1/2 cup chopped walnut
1-2 tbsp ground cinnamon
6-8 tbsp salted butter, softened
1.5 - 2 cups powdered sugar
2-3 tbsp milk

Mix warm water, sugar, yeast, and 1 cup bread flour in a mixer bowl, stir, cover, and let stand for 10 minutes.

Then add 2 cup bread flour, malt milk powder, vanilla, and salt. Mix well.

With a dough hook attachment on medium-low speed, knead for 8-10 minutes or until the dough is smooth and elastic. (You may add 1-2 tbsp bread flour if needed. You may use more or less than 3 cups.)

Cover the dough and let rise for 1 hour in a warm place or until the dough doubles in size.

Turn dough onto a floured surface and roll dough out into a rectangle shape about 12" x 17".

Spread soften unsalted butter on the dough and top with date sugar filling. Spread evenly and leave 1" along the edges. Sprinkle with ground cinnamon all over the surface.

Roll dough into a cylinder shape starting at the short end tightly. Pinch the seam to seal, and tuck in the ends.

Cut the cylinder into 8-12 pieces with a sharp knife. Then place the buns pieces, cut side down, in a lined baking tray about 1" apart. Cover and let rise for 45-60 minutes.

Brush the buns with egg wash. Bake at 375 deg. For 25 minutes or until golden brown.

Mix the glaze ingredients together well and spread it all over the buns.
