Select your bread for the sandwiches.
Measure out 3 ounces of cream cheese.
Add 1 tablespoon of mayonnaise to the cream cheese.
Add a dash of salt and pepper for taste.
Spread the cream cheese mixture evenly on both sides of the bread.
Layer black chopped olives on top of the cream cheese.
Optionally, mix in some green olives for color.
Sprinkle chopped pine nuts on top of the olives.
Optionally, add fresh basil or arugula for color and contrast.
Prepare the sandwiches ahead of time and place them on a sheet tray.
Cover the tray with plastic wrap and refrigerate for about an hour.
After chilling, cut off the crusts of the sandwiches.
Cut the sandwiches into triangles or your desired shape.
