Sizzle white onions in extra virgin olive oil with celery and a pinch of salt to release juices.
Add peas to the skillet to cook them longer and turn them into cream.
Add sausage out of its casing and ground beef to the skillet, cooking until browned.
Pour in a splash of white wine and let it smoke.
Add whole peeled tomatoes, salt, and black pepper to taste, then let it simmer on low to medium flame for at least one hour.
Add leftover Parmesan rinds to the Ragu sauce and let them melt in for added flavor.
In a separate pan, melt unsalted butter, then sift in flour gradually while mixing until creamy.
Slowly add warm milk to the flour mixture while whisking until it reaches a creamy consistency, then add a pinch of salt and nutmeg before setting aside.
Break fresh mozzarella by hand into pieces.
Chop boiled eggs into little pieces for layering.
Start assembling the lasagna by putting a little sauce at the bottom of the baking dish to prevent sticking.
Layer the pasta sheets over the sauce, then add more sauce, shredded boiled eggs, and Bechamel sauce, mixing them together.
Add shredded mozzarella and generous amounts of Parmesan cheese on top.
Repeat the layering process until you run out of pasta sheets, aiming for four layers.
Top the final layer with copious amounts of Parmesan cheese for a crunchy finish.
Bake at 390°F for a total of 45 minutes, covering for the first 30 minutes and then uncovering for the last 15 minutes.
Let the lasagna sit for at least 20 minutes before cutting into it.
