Add 1 cup of Greek yogurt, 1/2 cup of sunflower oil, and vanilla extract to the egg mixture, along with the zest from 1 lemon. Mix well, avoiding the white parts of the lemon zest.
Preheat the oven to 350°F (175°C).
Combine the dry ingredients with the wet ingredients using a spatula, mixing gently to avoid overmixing. Before fully combined, add the blueberries and fold them in carefully.
Pour the batter into the prepared baking pan and level the top if desired.
Bake in the preheated oven for 60 to 70 minutes, checking for doneness with a toothpick test.
While the loaf is baking, prepare the glaze by juicing one lemon and straining it to remove bits. In a bowl, combine 1 cup of icing sugar with the lemon juice and stir until mixed. Add vanilla extract to the glaze.
Once the loaf is baked, poke holes in the top while it's still hot and drizzle the glaze over it, allowing it to seep in for added flavor.
