Mussels in Wine Sauce

2 lbs fresh mussels
1 cup dry white wine
2 tbsp olive oil
4 cloves garlic, minced
1 small onion, finely chopped
1/4 cup fresh parsley, chopped
1/2 tsp red pepper flakes
1/2 tsp salt
1/4 tsp black pepper
1 lemon, cut into wedges

Rinse the mussels under cold water, scrubbing the shells to remove any dirt or debris. Discard any mussels that are open and do not close when tapped.

In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.

Add the red pepper flakes, salt, and black pepper to the pot, stirring to combine.

Pour in the white wine and bring the mixture to a simmer.

Add the cleaned mussels to the pot, cover with a lid, and cook for about 5-7 minutes, or until the mussels have opened up.
