Amla Candy

1 cup chhena (fresh paneer)
500 grams fresh amla (Indian gooseberry)
300-400 grams jaggery
powdered sugar (for coating, optional)

Wash the amla thoroughly and remove the seeds.

In a pot, combine sugar and water, and bring to a boil to make a sugar syrup.

Once the syrup reaches a one-string consistency, add the amla to the pot.

Cook the amla in the syrup for about 10-15 minutes until they become translucent and well-coated with syrup.

Add cardamom powder and salt, and mix well.

Remove the amla from the syrup and place them on a greased tray or parchment paper to cool.

If using, sprinkle desiccated coconut over the amla while they are still sticky.

Let the amla candy cool completely and harden for a few hours.

Once set, cut into pieces or leave whole as desired.

Store in an airtight container.
