Traditionally, families prepare it well in advance, allowing the flavors to meld and mature, making it a centerpiece of festive gatherings. Today, variations exist globally, but the Jamaican version remains a cherished classic, often enjoyed with a glass of rum.

Non-alcoholic option for flavor without alcohol
Start by blending 1 cup of raisins and 1 cup of red cherries with some wine and white rum until smooth.
In a separate bowl, mix 3 cups of sifted all-purpose flour with 1 teaspoon of salt, 3 teaspoons of baking powder, 1 teaspoon of ground nutmeg, and 1 tablespoon of ground cinnamon. Set aside.
In another bowl, add 1 cup of soft room temperature butter and 1.5 cups of brown sugar, and mix until creamy using a spoon.
In a separate bowl, beat 6 large eggs with 1 tablespoon of lemon juice until combined.
Add the egg mixture to the butter and sugar mixture and mix until creamy.
Pour in the blended fruit mixture and mix well.
Add 1 tablespoon of vanilla extract and mix.
Gradually add the dry flour mixture to the wet mixture in two parts, mixing until just combined.
Add half a bottle of OAS Browning to achieve the desired color, mixing gently to avoid overmixing.
Prepare the cake pan by buttering the sides and bottom, then lining the bottom with parchment paper.
Pour the cake batter into the prepared pan, ensuring there is at least an inch of space for rising.
Preheat the oven to 350°F (175°C) and bake the cake for about 1 hour to 1 hour and 10 minutes, until it pulls away from the sides of the pan.
