Peel and wash the green bananas.

Place a pot over medium flame and add 2 tablespoons of cooking oil.

Add 1 medium onion and cook until golden brown, about 1 minute.

Add 2 large diced tomatoes and stir into the onions.

Add peri-peri seasoning, a seasoning cube, and a little bit of salt, crushing the seasoning cube and stirring everything together.

If the tomatoes are not fully cooking, add a splash of water and use a spatula to crush them down.

Add the green bananas to the sauce and stir.

Add 2 cups of water to ensure the bananas are fully submerged.

Cover the pot and reduce the flame to medium-low, simmering for around 5-10 minutes until the bananas are well cooked.

Check the seasoning after 5 minutes and continue simmering for another 5 minutes until the bananas are super soft.

After 10 minutes, check the bananas; they should be breaking apart and the sauce should have reduced to a thick gravy.

Garnish with coriander leaves.
