Add 1 teaspoon of salt to 1 cup of extra fine bulgur wheat and mix well.

Pour boiling water over the bulgur wheat until just covered and cover with a tea towel.

Let the bulgur soak for 15-20 minutes.

Dice a whole onion and set aside.

Dice cherry tomatoes, sweet Romero pepper, white sweet pepper, mini cucumbers, and lettuce, then add to a bowl.

In a pan, heat olive oil and sauté the diced onion for a couple of minutes until translucent.

Add 2 heaping tablespoons of tomato paste to the onions and mix well, cooking for a couple of minutes.

Add the soaked bulgur wheat to the onion mixture and mix thoroughly.

Combine the bulgur mixture with the chopped vegetables in the bowl and mix well.

Add 2 tablespoons of pomegranate molasses and mix again.

Finish with fresh coriander leaves and a squeeze of lemon.
