Metre-Long Sausages Roasted Austrian Style. Street Food Festival in Italy

Preheat the oven to 400°F (200°C).

Slice the onions and bell peppers into strips.

Heat olive oil in a large roasting pan over medium heat.

Add the onions and bell peppers; sauté until softened, about 5-7 minutes.

Stir in minced garlic and caraway seeds; cook for another minute until fragrant.

Add sliced cabbage and diced potatoes to the pan; season with salt, black pepper, and paprika.

Place the metre-long sausages on top of the vegetables in the roasting pan.

Pour beer and vinegar over the sausages and vegetables.

Add bay leaves to the pan for flavor.

Cover the pan with foil and roast in the oven for 30 minutes.

Remove the foil and continue roasting for an additional 15-20 minutes until sausages are browned.

Garnish with chopped parsley before serving.

Serve hot with mustard on the side.
