1

Chop the ham steak into medium-sized cubes, including the fatty pieces and bone for flavor.

2

Heat plenty of olive oil in a 5-quart calo (or any pot) over medium heat.

3

Brown the ham steak until golden brown, then remove and set aside.

4

In the same pot, sauté 1 whole white onion, 1/2 red bell pepper, and 1/2 yellow bell pepper until soft and fragrant.

5

Add 1 tablespoon of pickled red peppers (bentos) to the sautéed vegetables.

6

Return the browned ham to the pot and mix everything together.

7

Add 2 tablespoons of homemade sofrito and 1/2 cup of tomato sauce, stirring to combine.

8

Season with 1/2 teaspoon of dried oregano, 1 teaspoon of Goya adobo, 1 packet of Goya sasong, and 1 packet of Goya ham seasoning (if using).

9

Add 1 cup of chopped carrots and 2 large yellow potatoes (soaked in cold water) to the pot.

10

Pour in 8 cups of water, ensuring it covers the ingredients and feels soupy when stirred.

11

Add the juice of 1/2 lime for balance of flavor.

12

Cook over medium-high heat with the lid on until the potatoes are tender, about 30 minutes.

13

Mash a couple of pieces of potato and return them to the soup to thicken the broth.

Add 4 oz of angel hair pasta and stir well, cooking until the noodles are tender, about 15 minutes.
