Preheat oven to 350°F (175°C) with the rack set to the middle position.
Create a mold using aluminum foil, measuring 9" wide by 14" long, folded for strength.
Roll out a sheet of foil at least 28" long and fold it back on itself for extra strength.
Fold in one of the short sides a couple of inches for clean edges.
Measure 28" and fold in half lengthwise, then unfold.
Fold both long edges towards the center and then unfold.
Fold the whole thing in half again lengthwise.
Fold in the four corners towards the middle line.
Unfold enough of the corner layers to lift up the middle flap and fold it flat to the other side.
Pinch one of the open corners at a 45° angle until the crease meets the other creases, forming the bottom corner.
Insert the triangular flap into the pocket created by the folds.
Repeat to create a second mold.
In a measuring cup, combine 1 cup of water and 3/4 cup of Greek yogurt.
Add 2 Tbsp of molasses to the water and yogurt mixture and mix well.
In a mixing bowl, combine 280g of all-purpose flour, 1/4 cup of sugar, 1 tsp of baking soda, 1 tsp of fine sea salt, and 1/4 tsp of MSG.
Whisk the dry ingredients together to avoid lumps, especially the baking soda.
Add the wet mixture to the dry mix and stir until combined, ensuring no dry flour remains.
Add 1/2 cup of pumpkin seeds, 1/4 cup of flax seeds, and 1/4 cup of white sesame seeds to the dough and mix well.
For the cranberry hazelnut variation, add 1 cup of whole hazelnuts and 1 cup of dried cranberries to the mixture and combine gently with a spatula.
Grease the molds with cooking spray to prevent sticking.
Transfer the dough into the molds, distributing it evenly and smoothing out the tops.
Use two loaf pans to support the outside walls of the molds for uniform baking.
Bake in the oven at 350°F for about 25 to 30 minutes, checking at 20 minutes for doneness.
