Vegetable Barley Soup

2 tablespoons olive oil
1 medium onion, diced
2 celery stalks, diced
2 carrots, diced
2 medium potatoes, diced
2 cups spinach, chopped
4 cups vegetable broth

Set the Instant Pot to sauté.

Add a little bit of olive oil.

Add in chopped onion, celery, and carrots.

Cook until the vegetables are caramelized for added flavor.

Add in big chunks of potatoes and everything else except the spinach.

Mix everything together lightly.

Set the Instant Pot to cook on high pressure for 15 minutes.

After 15 minutes, perform a quick release of the pressure.

Once the pressure is released, take the lid off.

Add in fresh spinach and let it sit for 3 to 5 minutes to wilt.

Serve the soup and optionally top with Parmesan cheese.
