Vegetable Barley Soup

1 cup pearl barley
4 cups vegetable broth
1 medium onion, diced
2 carrots, diced
2 celery stalks, diced
2 cloves garlic, minced
1 can (14.5 oz) diced tomatoes
1 cup green beans, chopped
1 tsp dried thyme
1 tsp dried basil
1/2 tsp salt
1/4 tsp black pepper
2 tbsp olive oil
2 cups spinach, chopped

Rinse the pearl barley under cold water and set aside.

In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5 minutes until the vegetables are softened.

Add the minced garlic and cook for an additional minute until fragrant.

Stir in the rinsed barley, vegetable broth, diced tomatoes (with juice), thyme, basil, salt, and pepper.

Bring the mixture to a boil, then reduce the heat to low and cover the pot. Let it simmer for about 30 minutes, stirring occasionally.

After 30 minutes, add the chopped green beans and continue to simmer for another 15 minutes.

Finally, stir in the chopped spinach and cook for an additional 5 minutes until the spinach is wilted.
