How to make vegetable barley soup | Healthy and Easy Recipe

Heat 1 tablespoon of oil in a pot.

Add 3 to 4 chopped garlic cloves and 1 chopped medium sized onion, and saute until the onions become softer.

Add 1 chopped tomato, 1 chopped celery stick, 2 diced medium sized carrots, 7 to 8 chopped mushrooms, half a cauliflower head cut into florets, and 1 cup of chopped green beans. Mix all the vegetables properly.

Add 1 cup of washed and drained pearl barley, 1 teaspoon of salt, fresh basil leaves, half a teaspoon of dried basil, half a teaspoon of oregano, and black pepper to taste. Mix everything together.

Add 6 cups of water and mix again. Cover and let it cook for 20 minutes on simmer.

After 20 minutes, add 2 cups of baby spinach and mix. Let it cook for another 5 minutes on simmer.

Turn off the heat and add lemon juice. Transfer the soup into a bowl.

Season the soup with more black pepper, oregano, red chili flakes, and adjust salt to taste.
