Vegetable Barley Soup

1 tablespoon neutral oil
1/2 yellow onion, diced
5 ribs celery, diced
2 carrots, sliced
2 garlic cloves, minced
7 cups vegetable broth
2 heaping cups frozen broccoli florets
1 cup barley
cilantro (optional, for garnish)
red chili flakes (optional, for garnish)
freshly ground pepper (optional, for garnish)

Add 1 tablespoon of neutral oil to a large pot and heat it up on medium-high heat.

Add in 1/2 diced yellow onion and 5 ribs of diced celery. Mix to prevent burning.

Add 2 sliced carrots and 2 minced garlic cloves. Mix everything together.

Sauté the vegetables for a few minutes until they soften.

Pour in 7 cups of vegetable broth and mix.

Add 2 heaping cups of frozen broccoli florets or fresh broccoli pieces. Mix again.

Add 1 cup of barley to the pot and stir everything together.

Bring the pot to a boil, then lower the heat to medium and let it cook for 25 to 30 minutes until the barley is cooked.

Once finished, garnish with cilantro, red chili flakes, and freshly ground pepper if desired.
