Blend fresh pineapple until smooth.
In a mixing bowl, combine shortening and butter with flour until flaky.
Add 1/2 teaspoon of salt and mix well.
Gradually add 1 cup of ice cold water, mixing until a dough forms.
Knead the dough for about a minute, then shape it into a ball.
Place the dough in a ziplock bag and refrigerate for 1 hour.
In a saucepan, combine blended pineapple, brown sugar, and a cinnamon stick.
Cook the mixture for about 20 minutes until thickened, stirring occasionally.
Remove the cinnamon stick after cooking and let the filling cool for 10-15 minutes.
Flour a surface and roll out half of the chilled dough to about 1/2 inch thick.
Cut out circles from the rolled dough using a cutter, making about 7 circles.
Roll out remaining dough to make more circles as needed.
Grease the tart pan and place the first layer of dough circles in it.
Beat the egg yolk with a teaspoon of water and brush it on the edges of the dough.
Fold the dough over to cover the filling, sealing the edges with the egg wash.
Brush the tops of the pastries with the egg wash.
Bake in the oven for 15-20 minutes, checking at 15 minutes for doneness.
