Heat olive oil in a large pot over medium heat until shimmering.

Add green peas, thyme, bay leaves, and pimento seeds; mix well.

Remove from heat and let sit, covered, for 5 minutes to steam.
Fluff the rice with a fork and stir in lime juice and chopped scallions.
Serve warm, garnished with additional scallions if desired.
