1

Remove the husks and silk from the corn and then remove the kernels from the cob.

2

Add the corn kernels to a blender with a bit of chicken broth and blend until smooth.

3

If you don't have chicken broth, you can use 1 cup of boiling water with a tablespoon of chicken bouillon or a bouillon cube.

4

Cut approximately half a pound of pork into small cubes and season lightly with salt and pepper.

5

Heat oil in a pot and add the pork to brown it well.

6

Once the pork is cooked, remove it from the pot but keep the oil.

7

In the same pot, add chopped onion and sauté until translucent.

8

Add 1 teaspoon of minced garlic and 1 teaspoon of aji amarillo powder, along with salt and pepper to taste.

9

Add 1 teaspoon of palillo to give color, being careful not to burn it.

10

Stir in the blended corn mixture, cooking over low heat and adding more broth if it gets too thick, stirring constantly to prevent sticking.

11

Cook for about 20 to 30 minutes until the corn is cooked through, adjusting seasoning as needed.

12

In the last 5 minutes, add the browned pork back into the pot to combine flavors.
