Prepare the ingredients: chop 3 tomatoes, peel 1 head of garlic, and have 3 potatoes cut and in water to prevent oxidation.

In a pot, heat oil and add the whole pieces of rooster to brown them, turning occasionally to avoid burns.

On another burner, heat a small comal and add bay leaves, cumin, and thyme to toast until fragrant.

Once the rooster is browned, remove it from the pot.

In the same pot, add the toasted chiles, tomatoes, onion, and 2 garlic cloves to roast.

Transfer the roasted ingredients to a blender along with the raisins and some water.

Add the piece of panela and a pinch of salt to the blender and blend until smooth.

In a pressure cooker, place the browned rooster and add the blended mixture, Worcestershire sauce, beer, chicken bouillon powder, and a little more water.

Seal the pressure cooker and cook for 1 hour once it starts to boil.

After cooking, add the pre-cooked potatoes to the pot and stir.

Serve the rooster with the potatoes and garnish with chopped cilantro.
