Surf and Turf
Cultural Context
Surf and Turf is a popular dish that combines seafood and meat, often enjoyed in British cuisine as a luxurious meal option.
Prepare the sauce with shallots and garlic.
Add olive oil, butter, salt, and pepper to the sauce mixture.
Place the sauce mixture in the CVH1 grill on the top rack position to brown for a few minutes, stirring occasionally.
Season the shrimp and steak with salt, black pepper, and lemon zest, mixing with clean hands.
After about 15 minutes, add half a cup of red wine and a little more than half a cup of beef broth to the sauce.
Move the skillet to the bottom rack of the grill and let it simmer.
Put the steak on the bottom rack for about 4 minutes per side.
After cooking the steak for 4 minutes on each side, move it to the top rack for an additional 4 minutes.
Remove the steak and let it rest for a few minutes.
Flambé the shrimp in the skillet, adding piscoco chili and pisco until the flames drop.
Add butter to the shrimp and flip them, smashing the heads to create broth.
Remove the shrimp and add the liquids from the meat and sauce to the skillet.
Plate the dish with the steak, shrimp, and asparagus.
