Mix all-purpose flour, dashi stock, and eggs in a bowl until smooth.
Preheat a takoyaki grill over medium heat until hot.
Grease the grill with oil using a brush or paper towel.
Pour batter into each mold, filling them halfway.
Add diced octopus, green onions, tempura scraps, and pickled ginger into each mold.
Pour more batter over the fillings until molds are full.
Cook for about 3-4 minutes until the bottom is golden brown.
Use a skewer to turn the balls 90 degrees to cook evenly.
Continue cooking for another 3-4 minutes until golden brown all around.
Remove the takoyaki from the grill and place on a serving plate.
Drizzle with mayonnaise and soy sauce, then sprinkle with bonito flakes and nori.
