Chop 4 medium carrots into very small pieces.

Chop 2 large red onions and set aside.

Heat olive oil in a pan and add the chopped onions; sauté for 1 minute.

Add 4 cups of water to the pan and bring to a boil; let it boil on low heat for 1.5 hours.

After 1.5 hours, mix in the cooked vegetables and season with 2 teaspoons of salt, 1 teaspoon dried oregano, and 1 teaspoon dried thyme; cover and let cook on low heat until the liquid reduces by half.

In a large pot of salted boiling water, add fresh handmade pappardelle pasta and let it boil for 3 minutes; remove when the pasta floats to the top.

Once the sauce has thickened after 1.5 hours, serve the pasta topped with Parmesan cheese.
