Place a damp cloth under the chopping board to prevent slipping.
Chop onion, carrot, and celery into even-sized dice.
Crush 2 cloves of peeled garlic.
Heat a large pan and add 1 tablespoon of olive oil.
Add the chopped vegetables to the pan and sauté for about 5-7 minutes until softened.
Remove the softened vegetables from the pan.
Increase the heat and add another splash of olive oil to the pan.
Add 375 grams of ground beef to the pan and pan-fry until browned, ensuring the meat fries and doesn't stew.
Add 1 teaspoon of dried oregano and 1 teaspoon of dried basil to the meat.
Return the softened vegetables to the pan with the meat and stir well.
Add 1 tablespoon of tomato puree and 1 can of chopped tomatoes to the pan; stir to combine.
Let the mixture simmer for about 5-7 minutes to thicken.
Prepare low salt beef stock and add it to the sauce; let it cook for about 10 minutes.
Add green lentils to the sauce and stir; let them warm through for about 5 minutes.
Cook spaghetti according to package instructions and drain.
Plate the spaghetti and top with the bolognese sauce.
