1/2 cup all purpose flour
1/4 cup muscovado sugar
1/4 cup brown sugar
1 tbsp white sugar
2 tsp cinnamon powder
50 gram cold salted butter
1 3/4 cup all purpose flour
1/4 cup cornstarch
1 tbsp baking powder
1 tsp baking soda
1 tsp cinnamon powder
1/2 cup white sugar
2 large egg
1 cup fresh milk
1/4 cup canola oil
1 tsp vanilla extract
3/4 cup confectioner sugar/icing powder

Preheat the oven to 200 degrees Celsius (at least 15-20 minutes before using).

In a small bowl, combine all the ingredients for the crumble and let it chill, then set aside.

In a mixing bowl, whisk all the dry ingredients together.

Make a well in the dry ingredients and gradually add all the wet ingredients, mixing until incorporated but do not over mix.

Scoop the muffin batter into a muffin tin, layer with crumble/filling, and add another scoop of muffin batter on top.

Sprinkle white sugar on top of the muffins.

Bake in the preheated oven at 200 degrees Celsius for 5 minutes, then reduce the heat to 180 degrees Celsius and bake for an additional 12-15 minutes.

Let the muffins cool down and transfer them to a wire rack.
