This dish reflects the island's multicultural heritage, combining influences from Indian, Creole, and Chinese cuisines. Today, Faratas have become a staple in Mauritian households and are enjoyed by locals and visitors alike, often served at gatherings and celebrations.

Olive oil is healthier due to its monounsaturated fats.
Sift 1 kg of flour into a bowl.
Add 2 teaspoons of salt and mix well.
Pour in 4 tablespoons of oil and mix to obtain a sandy paste.
Gradually pour 500 to 600 ml of hot water into the mixture, mixing until the dough comes together.
Knead the dough until very soft and no longer sticky, adding a little oil if needed.
Let the dough rest for 10 minutes.
Divide the dough into small balls and shape them into smooth, round forms.
Flatten each ball slightly to create a more regular circle.
Roll each ball into a large thin circle, brushing the surface with oil and sprinkling with flour.
Fold the dough from both sides and then fold the other two sides to form a square.
Cook the faratas on a very hot pan, adding oil as needed.
Cook until bubbles appear, then flip to brown the other side.
Remove from heat and press to remove lamination, then cover with a kitchen towel to steam and keep tender.
