Potato Knish

Cultural Context

Potato knish has its roots in Eastern European Jewish cuisine, often served as a comforting snack or meal. Traditionally, these pastries are filled with a savory potato mixture and encased in a flaky dough. Knishes are a staple at Jewish delis and are often enjoyed during family gatherings and celebrations. Today, they have transcended cultural boundaries and are enjoyed by many, with variations that include different fillings such as meat or cheese.

1

Wash, peel, and boil 5 large potatoes in salted water until tender.

2

While potatoes are boiling, prepare the dough by adding 1 cup of water, 1 and 1/2 teaspoons of salt, 2 tablespoons of white vinegar, and a dash of olive oil to a mixing bowl.

3

Add 1 egg to the mixture and stir well, beating the egg.

4

Gradually add 2 cups of flour to the mixture and knead until a soft, smooth dough forms, adding extra flour as needed to prevent stickiness.

5

Cover the dough and set it aside until the potatoes are cooked and cooled.

6

Once the potatoes are cooked, place them in a bowl to release moisture.

7

In a pot, add 4 to 6 tablespoons of olive oil and heat it, then add 2 large sliced onions and cook until caramelized and golden brown.

8

Mash the cooled potatoes in the bowl, then add butter and mix until melted and combined.

9

Cover the potato mixture and set it aside to cool.

10

Preheat the oven to 350°F (175°C).

11

Flour the surface and take half of the dough to roll out into a long sheet, then cut into strips about 2 inches wide.

12

Take a portion of the potato filling and roll it into a ball, placing it on the dough strip.

13

Fold the dough over the filling, bringing the edges towards the center and rolling from side to side to seal the filling inside.

14

Place the filled knishes on a greased baking sheet lined with foil.

15

Brush the tops of the knishes with a lightly beaten egg for color.

16

Sprinkle the tops with paprika or cayenne pepper for extra flavor and color.

17

Bake the knishes for about 30 to 35 minutes until golden brown.

18

Serve with mustard on the side.
