Boil potatoes in salted water until tender, about 15-20 minutes.
Drain and let cool slightly before peeling.
Mash the potatoes in a large bowl until smooth.
Heat olive oil in a skillet over medium heat; sauté onion and garlic until translucent, about 5-7 minutes.
Add sautéed onion and garlic to the mashed potatoes; mix until combined.
Season the potato mixture with salt, black pepper, and parsley; stir well.
In another bowl, combine flour and salt; create a well in the center.
Add egg and water to the well; mix until a dough forms.
Knead the dough on a floured surface for about 5 minutes until smooth.
Divide the dough into equal pieces and roll each into a circle.
Place a spoonful of potato filling in the center of each dough circle.
Fold the dough over the filling and pinch to seal tightly.
Preheat the oven to 375°F (190°C).
Arrange knishes on a baking sheet lined with parchment paper.
Brush the tops with melted butter or olive oil.
Bake for 25-30 minutes until golden brown.
