Moroccan Potato Knish

Start with leftover potatoes and cooked sweet potato.
Add Rasel hanut spice to the potato mixture.
Take cold puff pastry and line the bottom with a little bit of the potato filling from the edge.
Brush a little bit of egg wash along the top of the pastry to seal it.
Carefully roll the pastry up into a log shape.
Cut the log into individual knishes using the back of your hand for a good seal.
Take each knish and place a bit of egg wash in the center before pulling the points over to seal the pastry around the potato filling.
Remove the knishes from the oven after baking until golden brown.
Top the knishes with a little bit of sour cream and spicy Moroccan eggplant relish before serving.
