Peel and chop 7 russet potatoes and place them in a large pot.

Cover the potatoes with water, add some salt, and bring to a boil over high heat.

Reduce to a simmer and cook the potatoes for about 20 minutes until tender.

While the potatoes are cooking, slice 2 onions and add them to a skillet with 1/4 cup of vegetable oil and a pinch of salt.

In a stand mixer, beat together 2 eggs, 1 cup of vegetable oil, 1 cup of warm water, and 1 teaspoon of salt.
