Add chopped bell peppers and bay leaves; cook for 3-4 minutes until tender.
Crack eggs directly into the mixture and stir gently to combine.
Cover and cook until eggs are set, about 5-7 minutes.
Remove from heat and squeeze lime juice over the top.
Garnish with chopped scallions and coriander before serving.
