Fill a large pot with water and add the whole chicken and chicken head.

Season the pot with salt, MSG, and ginger.

Bring the pot to a boil and let it cook with everything inside.

Once cooked, remove the chicken and let it cool before shredding.

Prepare the noodles by mixing 3 packs of tapioca starch and 3 packs of rice flour in a KitchenAid mixer.

While mixing, gradually add hot water until the mixture forms a dough-like consistency.

Knead the dough by hand until it reaches the desired texture.

Roll out the dough on a floured surface to about an inch thick, keeping it covered with a damp napkin to prevent drying.
