Add chopped onion and sauté until translucent, about 3-4 minutes.
Stir in minced garlic and ginger, cooking until fragrant, about 1 minute.
Add diced meat and cook until browned, about 5-6 minutes.
Pour in broth and bring to a simmer.
Add chopped vegetables and cook until tender, about 5 minutes.
Stir in soy sauce and season with salt and pepper to taste.
Return noodles to the pot and heat through, about 2 minutes.
Serve hot, garnished with cilantro, lime, and green chili.
