1 to 2 lemons worth of juice and zest
1/2 cup sugar
1/2 cup water
1 teaspoon fresh rosemary
1/4 cup pecans
1 to 2 teaspoons honey

Prepare the fig jam by dicing figs if using fresh, or soaking dried figs in water for at least 15 minutes.

In a saucepan, add the figs, sugar, lemon juice, lemon zest, and water.

Bring the mixture to a boil, stirring until the sugar is completely dissolved.

Simmer over medium-low heat, stirring occasionally and mashing the figs until the mixture thickens and turns jammy, about 30 to 40 minutes.

Once the jam is ready, spoon it into a mason jar, close the lid, and let it cool to room temperature.

Preheat the oven to 350°F.

Score the rind of the brie by cutting parallel and perpendicular lines through the top rind, being careful not to cut too deeply.

Mince the rosemary and pecans.

Place the brie into a small cast iron skillet or oven-safe dish.

Top the brie with some of the fig jam, minced rosemary, and pecans if desired.
