Braised Beef with Garlic

Chicken thighs are lower in fat, while pork shoulder is often cheaper.
Preheat oven to 325°F (163°C).
Season beef with salt and black pepper.
Heat olive oil in a large Dutch oven over medium-high heat until shimmering.
Sear beef on all sides until browned, about 4-5 minutes per side.
Remove beef and set aside; add garlic, onions, carrots, and celery to the pot.
Sauté vegetables until softened, about 5-7 minutes.
Sprinkle flour over vegetables and stir to combine; cook for 1-2 minutes.
Pour in red wine, scraping up browned bits from the bottom of the pot.
Add beef broth, bay leaves, and thyme; bring to a simmer.
Return beef to the pot, cover, and transfer to the oven.
Braise for 2-3 hours, until beef is tender and easily shredded.
Remove pot from oven; stir in butter and adjust seasoning if necessary.
Let rest for 10 minutes before serving; garnish with parsley.
