Originally a staple for breakfast, these steamed rice cakes are often enjoyed with a variety of chutneys and sambar. In Mauritius, local spices and vegetables enhance the flavor, making it a unique culinary experience. Today, Idli is cherished not only in Mauritius but also in Indian communities worldwide, celebrated for its light texture and versatility.

urad dal

Soak rice and urad dal with fenugreek seeds in water for 6-8 hours.
Drain the soaked mixture and blend until smooth, adding water as needed.
Ferment the batter in a warm place for 8-12 hours until bubbly.
Add salt and mix well to incorporate air.
Grease idli molds with oil and pour the batter into each mold.
Steam the molds in a steamer for 10-15 minutes until the idlis are firm.
Remove the idlis from the molds and let cool slightly.
Heat oil in a pan and add mustard seeds, curry leaves, green chilies, and ginger.
Sauté until fragrant and add chopped vegetables, cooking until tender.
Serve the idlis with the sautéed mixture and coriander leaves on top.
