Sun-dried Tomato and Basil Crackers

Start by blending sunflower seeds, pumpkin seeds, and chia seeds in a small blender until grainy.
Chop sun-dried tomatoes into small pieces and add them to the blender with the seeds.
Blend until the mixture has a consistency similar to grainy flax meal, avoiding over-blending.
Transfer the blended mixture to a mixing bowl.
Add flax meal (or ground flax seeds), garlic powder, onion powder, dried basil, and cracked pepper to the bowl and mix well, breaking up any clumps of onion powder.
Pour in 1/2 cup of water and mix until the mixture sticks together and there is no dry seed powder left.
Form the mixture into a ball and place it on a piece of parchment paper.
Cover with another piece of parchment paper and roll out to about 1/4 inch thick, ensuring even thickness for uniform cooking.
Preheat the oven to 325°F (163°C).
Peel off the top layer of parchment paper and cut the rolled dough into desired shapes using a pizza cutter, scoring but not cutting all the way through.
Place the scored crackers on a baking sheet lined with parchment paper and bake for 20 minutes.
Remove from the oven, flip the crackers over, and score them again if necessary.
Return the crackers to the oven and bake for an additional 20 minutes until they are slightly darkened around the edges.
Allow the crackers to cool slightly before breaking them apart.
Store in an airtight container in the fridge for up to a week.
