1

Prepare the ingredients: score the fileted sea bass, slice the eggplant, and chop the shallots and garlic.

2

Heat olive oil in a pan until hot.

3

Add the sliced eggplant to the hot oil and cook until crispy, about 2-3 minutes.

4

Remove the eggplant from the pan and drain lightly.

5

In the same pan, add shallots and garlic, cooking until lightly done.

6

Add a tablespoon of white wine to the pan and reduce it down.

7

Stir in a couple of tablespoons of vegetable stock and chopped tomatoes to create the sauce.

8

Add cherry tomatoes, black olives, and fresh oregano to the sauce without cooking them.

9

Heat another tablespoon of olive oil in the pan and place the sea bass skin-side down, cooking for about 90 seconds to 2 minutes.

10

Carefully turn the fish over and finish cooking, adding lemon juice inside the fish while it cooks.

11

Plate the couscous, place the sea bass on top, and drizzle the sauce around the dish.
