Wash the rice and soak it in cold water for about 30 minutes.

Smash 5 cloves of garlic and finely chop them.

Thinly slice 5 green onions, separating the whites and greens.

In a container, mix 2 cups of water with 3 tbsps of soy sauce, 1 tbsp of mirin, and 1 teaspoon of dashida.

Heat 1 tbsp of oil in a heavy bottomed pot over medium heat.

Add 300 g of ground beef to the pot and season with a little bit of salt. Let it sit for 2 minutes until the bottom turns golden brown, then break it up and stir for about 1 minute.

Add the chopped garlic and white parts of the green onions to the pot and sauté for about 3 to 4 minutes.

Remove the cooked beef from the pot, leaving the oil behind.

Add the drained rice to the pot and stir fry for about 1 minute, coating each grain with the oil.

Pour the seasoned water into the pot and bring it to a boil, stirring occasionally to prevent sticking.

Once boiling, reduce the heat to low and top with the cooked ground beef. Cover with a lid and simmer for about 15 minutes.

After 15 minutes, turn off the heat but do not open the lid. Let it sit for another 10 minutes to finish cooking with the residual steam.

Open the lid and sprinkle the green onion greens over the rice, mixing well.

Optionally, add a raw egg yolk, butter, or toasted sesame oil for extra flavor before serving.
