Mince 4 cloves of garlic.

In a large pot, melt butter and olive oil on high heat.

Add the chopped Panetta and cook until golden brown.

Caramelize the ground meats (pork, lamb, and beef) in batches until dark brown, stirring and breaking up lumps; transfer to a bowl after each batch.

Switch to medium heat and add garlic and shallots to the pot, followed by onion, carrots, and celery; stir and cook for about 15 minutes until softened.

Add the caramelized meat back to the pot and mix; cook for about 4 to 5 minutes.

Pour in white wine, scrape the bottom of the pot, and season with salt and pepper; cook for about 4 to 5 minutes until the alcohol evaporates.

Add milk, San Marzano tomatoes, and beef stock; mix well and bring to a boil.

Cover the pot and transfer it to the oven; braise at 400°F for about 2 to 4 hours.
