Heat olive oil in a cast-iron pan until hot.

Add diced onions and sauté until they start to develop color.

Add minced garlic and cook briefly.

Add diced carrots and celery; sauté until vegetables are softened.

Remove the vegetables from the pan.

Add more olive oil and ground beef to the hot pan; break up the meat and cook until browned.

Deglaze the pan with red wine to lift the fond from the bottom of the pan.

Reduce the liquid until it thickens, then re-add the vegetables and seasonings.
