Lemon Chicken

550g Boneless Chicken Thighs
2 tsp rice wine
2 tsp light soy sauce
1/2 tsp dark soy sauce
1 tsp oyster sauce
1/8 tsp black pepper
1 tsp cornstarch
1 Lemon
30g Cilantro
4 Chilies (optional)
120g Onion
6 Garlic Cloves
Cooking oil
1/8 tsp salt
1/4 tsp sugar

Mix 550g boneless chicken thighs with 2 tsp rice wine, 2 tsp light soy sauce, 1/2 tsp dark soy sauce, 1 tsp oyster sauce, 1/8 tsp black pepper, and 1 tsp cornstarch. Marinate for 15 minutes.

Slice 1 lemon, chop 30g cilantro, and prepare 120g onion and 6 garlic cloves.

Heat cooking oil in a pan over medium heat.

Add the marinated chicken to the pan and cook until golden and fully cooked, about 5 minutes.

Add a bit more oil to the pan, then add the garlic and onion. Stir-fry until fragrant.

Add the cooked chicken back into the pan and toss to mix with the garlic and onion.

Add the lemon slices to the pan and stir-fry quickly for about 10 seconds.

Add the chopped cilantro and optional chilies, then give everything a good toss.

Season with 1/8 tsp salt and 1/4 tsp sugar, mixing everything well.
