- ●1 lb boneless, skinless chicken breasts
- ●1 cup orzo pasta
- ●4 cups chicken broth
- ●1 medium onion, diced
- ●2 cloves garlic, minced
- ●1 lemon, zested and juiced
- ●2 tbsp olive oil
- ●1 tsp dried oregano
- ●1/2 tsp salt
- ●1/4 tsp black pepper
- ●1/4 cup fresh parsley, chopped
Instructions
- 1Heat olive oil in a large pot over medium heat.
- 2Season the chicken breasts with salt, pepper, and oregano. Add to the pot and cook until browned on both sides, about 5-7 minutes. Remove chicken and set aside.
- 3In the same pot, add diced onion and garlic. Sauté until the onion is translucent, about 3-4 minutes.
- 4Add the orzo to the pot and stir for 1-2 minutes until slightly toasted.
- 5Pour in the chicken broth, lemon juice, and lemon zest. Stir to combine.
- 6Return the chicken to the pot, bring to a boil, then reduce heat to low and cover. Simmer for 15-20 minutes until the chicken is cooked through and orzo is tender.
- 7Remove the chicken, shred it with two forks, and return it to the pot. Stir to combine.
- 8Adjust seasoning with additional salt and pepper if needed.
- 9Garnish with fresh parsley before serving.

- ●1 tbsp vegetable oil

- 1Heat vegetable oil in a skillet over medium-high heat.
- 2Add the sliced onions and sauté until translucent, about 3 minutes.
- 3Add the beef slices to the skillet and cook until browned, about 5 minutes.
- 4Stir in the grated ginger and minced garlic, cooking for an additional minute.
- 5In a small bowl, mix together soy sauce, mirin, and sugar until dissolved.
- 6Pour the sauce over the beef and onions, stirring to combine.
- 7Reduce heat to medium and let simmer for 2-3 minutes until the sauce thickens slightly.
- 8Remove from heat and stir in sesame oil and black pepper.
- 9Serve the beef mixture over cooked rice in bowls.
- 10Garnish with chopped green onions before serving.
