Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 cup orzo pasta
  • 4 cups chicken broth
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup fresh parsley, chopped

Instructions

  1. 1Heat olive oil in a large pot over medium heat.
  2. 2Season the chicken breasts with salt, pepper, and oregano. Add to the pot and cook until browned on both sides, about 5-7 minutes. Remove chicken and set aside.
  3. 3In the same pot, add diced onion and garlic. Sauté until the onion is translucent, about 3-4 minutes.
  4. 4Add the orzo to the pot and stir for 1-2 minutes until slightly toasted.
  5. 5Pour in the chicken broth, lemon juice, and lemon zest. Stir to combine.
  6. 6Return the chicken to the pot, bring to a boil, then reduce heat to low and cover. Simmer for 15-20 minutes until the chicken is cooked through and orzo is tender.
  7. 7Remove the chicken, shred it with two forks, and return it to the pot. Stir to combine.
  8. 8Adjust seasoning with additional salt and pepper if needed.
  9. 9Garnish with fresh parsley before serving.

  5. 5In a small bowl, mix together soy sauce, mirin, and sugar until dissolved.
  6. 6Pour the sauce over the beef and onions, stirring to combine.
  7. 7Reduce heat to medium and let simmer for 2-3 minutes until the sauce thickens slightly.
  8. 8Remove from heat and stir in sesame oil and black pepper.
  9. 9Serve the beef mixture over cooked rice in bowls.
