Lemon Chicken

Clean the chicken wings.

Season the wings with onion powder, garlic powder, ginger powder, salt, and pepper. You can replace these with your favorite chicken seasoning if desired.

Optionally, season the wings overnight or about an hour before cooking.

Add 1 large whisked egg to the wings without any water or milk and massage it into the chicken.

Prepare the coating by mixing cornstarch, all-purpose flour, onion powder, garlic powder, salt, and pepper in a bowl.

Dip each wing into the dry mix, using clean hands or gloves, and squeeze the mixture into the wings to ensure they are very dry for crispiness.

The moisture from the egg will create flakes on your fingers; rub them into the dry mixture to enhance the crispiness.

Heat vegetable oil to 350 degrees Fahrenheit for frying the wings for about 12 minutes.

For the lemon sauce, mix cornstarch with water in a pan, or use lemonade instead of water.

Add freshly squeezed lemon juice to the mixture, adjusting the amount if using lemonade.

Add granulated sugar to the sauce, with the option to add more later if desired.

Bring the sauce to a boil and let it boil for about three minutes.

Optionally, add food coloring to achieve a yellow color.

After boiling, add freshly grated lemon zest to the sauce and taste for sweetness, adjusting with more sugar if necessary.

Once the wings are done frying, toss them with the lemon sauce while they are hot.
