Lemon Chicken

750 g chicken with bone
juice of 2 lemons
1 tablespoon mustard oil
6 cloves garlic, finely chopped
1 inch ginger, finely chopped
5 green chilies, finely chopped
salt to taste
1 cup yogurt
1/2 teaspoon turmeric
2 tablespoons ghee
2 bay leaves
3 green cardamoms
1 tablespoon corn starch
1/2 cup fresh cream
15 peppercorns
1/2 teaspoon cumin seeds
5 green cardamoms
5 cloves
10 fenugreek seeds
fresh coriander, chopped

Drizzle juice of 2 lemons over 750 g of chicken with bone.

Drizzle 1 tablespoon of mustard oil over the chicken.

Add 6 finely chopped cloves of garlic, 1 inch of finely chopped ginger, and 5 finely chopped green chilies to the chicken.

Sprinkle salt to taste and marinate the chicken with all these ingredients.

Let the chicken rest for at least half an hour.

After resting, add 1 cup of yogurt and 1/2 teaspoon of turmeric to the chicken.

Heat 2 tablespoons of ghee in a pan and add 2 bay leaves and 3 green cardamoms.

Once the spices release their aroma, add the marinated chicken to the pan.

Saute the chicken on medium to low flame for about 3 to 4 minutes.

Cover the pan and cook the chicken, stirring occasionally, until done.

Make a slurry with 1 tablespoon of corn starch and pour it into the chicken to thicken the sauce.

Add 1/2 cup of fresh cream to the chicken and mix well.

Sprinkle in a special spice mix made of 15 peppercorns, 1/2 teaspoon of cumin seeds, 5 green cardamoms, 5 cloves, and 10 fenugreek seeds.

Sprinkle freshly chopped coriander on top before serving.

For a gravy version, add 1/2 liter of water before adding corn starch and cream.
