Cultural Context

Khow Suey, a beloved dish in Myanmar, reflects the country's rich culinary heritage influenced by Indian and Thai flavors. Traditionally enjoyed during special occasions, it showcases the harmony of coconut milk, spices, and tender chicken, served over noodles. Servings4
3 onions
3 Kashmiri red chilies
6-7 cloves of garlic
1.5 tbsp ginger garlic paste
1/2 kg chicken
coconut milk
noodles
salt
sesame oil
dhania powder (coriander powder)

coconut milk

🥗Healthier: light coconut milk

💰Cheaper: evaporated milk

Light coconut milk reduces calories while still providing creaminess.

chicken

🥗Healthier: tofu

💰Cheaper: chicken thighs

Tofu is a plant-based alternative, while thighs are often less expensive than breasts.

egg noodles

🥗Healthier: whole wheat noodles

💰Cheaper: spaghetti

Whole wheat noodles add fiber, while spaghetti is widely available.

fried garlic

🥗Healthier: baked garlic

💰Cheaper: fresh garlic

Baked garlic retains flavor with less oil, while fresh garlic is more economical.

1

Put all dry ingredients (dhania powder, Kashmiri red chilies) in a blender and mix to form a paste.

2

Heat sesame oil in a wok.

3

Add the blended masala to the wok and cook on a slow flame for about 15 minutes, stirring constantly until the oil separates from the masala.

4

Add ginger garlic paste and salt after 15 minutes of cooking the masala.

5

Add washed boneless chicken pieces to the wok and coat them with the masala, cooking until the chicken is half done.

6

Add water to the chicken mixture to achieve a thin gravy consistency, but not too runny.

7

Fry chopped garlic and chopped onions in a separate pan for toppings, being careful not to burn the garlic.

8

Drain the fried garlic and onions onto a tissue.

9

Add about 150 ml of coconut milk to the chicken mixture and let it simmer for another 10 minutes.

10

Boil the packet of noodles according to the instructions on the package.

11

Assemble the dish by serving the noodles and soup separately, allowing people to add their own toppings like fried garlic, roasted crushed peanuts, fried onions, fried mushrooms, spring onions, and lemon.
